Castellblanc is one of the oldest wineries producing cava in Penedès. It was founded in 1908 as a small family business by the Parera family, who provided a devotion to oenology and passion for tradition combined with the enthusiasm and daily efforts of its team. The result was a business that knew how to experiment and adapt to the demands of a product and of a market.
One of the key elements of the cava production process is the individualised treatment of the base wine. Moreover, it should not be forgotten that Castellblanc has been a pioneer in applying wine microfiltration in the stage prior to tirage for fermentation purification in the bottle, with its own selection of yeast. This has also allowed it to be a benchmark in advanced stirring methods.
